During the saccharification of liquefied starch, dextrins are broken down to glucose, and for yeast to produce ethanol, it must be fed an abundant and constant source of glucose. To maintain an optimum glucose concentration in fermentation a high-activity glucoamylase with consistent, superior quality is needed.
