Amylase

An enzyme that catalyzes the breakdown (hydrolysis) of starch. Names such as alpha-amylase, endo-alpha-amylase, beta-amylase, amyloglucosidase (glucoamylase), etc., refer to enzymes that attack starch or starch breakdown products in slightly different ways.
