Chemical reaction induced by microorganisms such as yeast, mould or bacteria that splits complex organic compounds into simpler ones. For example, wine is the product of yeast converting sugar into alcohol and carbon dioxide. In biotechnology, fermentation refers to the process of growing microorganisms to produce biochemical products.
