Glucose oxidase

An enzyme that converts glucose into gluconic acid and hydrogen peroxide (H2O2), at the same time reducing dioxygen (O2) to water. The enzyme is used in the baking industry for gluten strengthening and also clinically for determining glucose, e.g. in a patient's urine.
