Enzymatic degumming is a well-established industrial process for the physical refining of vegetable oils. With enzymes gums are effectively removed in a sustainable process where you reduce the use of chemicals and get a more profitable process.

Enzymatic interesterification produces hard stocks for margarine and shortening fats without creating unhealthy trans-fatty acids. Enzymatic interesterification is a more cost-efficient process than chemical interesterification.

Enzymes also allow the production of fish oils and other specialty oils such as oleochemicals from specialty esters and amides for the cosmetics industry.

Interesterification

Interesterification
The most common processes for obtaining the right consistency and melting points of margarine and baking fats are chemical interesterification and hydrogenation. Both processes require harsh processing, often resulting in high levels of waste products and generation of  trans-fatty acids. Enzymatic interesterification is a more cost-efficient and sustainable process,  and it produces no trans fatty acids.
