Reduce viscosity of gelatinized starch

Novozymes BAN® is used in several processes in the starch industry often as a processing aid when filtration problems appear after a saccharification (maltose or dextrose syrup production), or when making maltodextrins. 

BAN® breakdown products are soluble dextrins of differing chain lengths and oligosaccharides. The BAN® product range includes a conventional alpha-amylase and an endoamylase. Ion exchange or carbon treatment of the saccharified liquid will normally remove the enzyme activity.
