Vertera® Mello for plant-based applications, including drinks and vegurts, is an alpha-galactosidase that that hydrolyzes terminal, non-reducing alpha-D-galactose residues in alpha-D-galactosides, including galactose oligosaccharides, galactomannans and galactolipids. The result is mild in-situ sweetness from the break-down of oligosaccharides.
