Brewing case study:
Enzymes help overcome equipment limitation

Find out how we helped our customer optimize their process

Case study

Challenge: An international brewer wanted to implement a known recipe into another of its breweries. But the “new” brewery did not have a cereal cooker. How to overcome the equipment limitation?

Solution: Ceremix® Flex and Ultraflo® Max enabled the brewer to brew with 40% maize grits – and no cereal cooker. Novozymes established proof of concept in the lab before successfully implementing the solution full-scale.

Enzymes enable high FAN recipe to use low FAN malt

Challenge: Constraints in procuring high FAN malt made it impossible for an international brewer to brew its high RDF (78%) brand.

More CapEx or more optimal process?

Challenge: An international brewer was capacity constrained in the fermentation/storage area and needed to release capacity to increase volume and meet demand.

Enzymes ensure predictable, stable filtration

Challenge: For years, this international brewer had used the same product for hemicellulose breakdown in its recipes, which go from 10-40% barley.
