Case study

Challenge: A regional and international brewer wanted to launch an exciting new product: a zero-carb beer. Despite having evaluated various processing conditions and aids, the brewer hadn’t been able to reach the targeted RDF level. 

Solution: The customer and Novozymes discussed optimal brewhouse conditions and potential enzyme solutions. Brewing trials at a pilot plant and, ultimately, at scale showed it was possible to achieve the RDF target by using Attenuzyme® Core. The brewer successfully launched the new product – the first in its market – and attracted lots of attention.
